Virgin coconut oil (VCO) has aroma: either acquired aroma from processing method used (like that of caramelized protein for those subjected to significant heating, or a slight tinge of rancidity for those processed using fermentation or decomposition), or inherent aroma (like the pleasant aroma for those using a fresh extraction process where the oil is removed from coconut milk while it is still fresh and unheated). The aroma of VCO is easily smelled by rubbing the oil between the palms of one's hands and smelling it by fully covering the nose. On the other hand, the ordinary coconut cooking oil has insignificant aroma due to chemical treatment and very high temperature heating during processing.
If you submit it to chemical analysis, you will further know that it is VCO because it has monolaurin content, high lauric acid content (above 50%) and does not have any chemical residues.

It should be what the label says it is. Otherwise it is illegal. THe virgin coconut oil is very thick and white. How will I check to make sure that the virgin coconut oil I am buying is not the ordinary coconut cooking oil?
Contrary to what some people have thought in the past, coconut oil has many benefits to human health. The combination of the use of coconut products and fish by Pacific Islanders is good testament to that. Do a search on www.dogpile.com, there are several sites that will give you supporting detail. As in the purchase of any product that comes in a bag, can or package of some sort, you have only the word of the supplier. Stick with good brand names (not those offering to save you a few cents unless you know them to be genuine) and by checking visually the quality of the product, as suggested by someone else.
Other than reading the ingredients .....I don't know.
Coconut oil should not be used.
Here in the U.S. they made movie theaters stop popping popcorn in coconut oil.
